The one just before Factions was released, You were never sure what style of build you would come up against. Split, Spike, Front Loaded Preassure, Balanced or combinations of the first 3 with heaps of variations in how to go about any of them.
Plus The one thing you never saw was highly defensive stalling builds which just want to sit there till VoD since everyone wanted to get rating as quickly as possible.

I loved the late 2007 meta. Trying to get around multipile layers of defense was pretty fun to do, especially as a Ranger or Mesmer.
Sineptitude/Omegaspike meta's tie for my most hated meta.

Favorite meta... Any of the ones in which it was feasible to run 3 Warriors and 2 Rangers.
Least Favorite... Grenth Dervish train. Was the most annoying shit in the world to play against Dervishes that hit for big domage and you couldn't use prot.

Before bsurge with ether prodigy powering a utility midliner, or with the 5 energy bsurge and un-nerfed melee ward (eurospike!), good times to play elementalist.
Worst
Asian builds, TACT style builds that relied on the massive lag caused by playing on their servers or the usual Me style crap (sinsplit, a/d spike)
As much as people worship the asians for their play i don't think i will ever miss games with 5k ping and some of the lamest builds ever created.

Worst meta was the spike meta before the May update. The current one is pretty boring, too.

I think the meta where everyone was a freaking water ele.
Or the one where it was best to just get all dmg to run the flag till VOD.
Favourite, I actually like Turret rangers! I also liked spiritway, with the two ranger spirits and /rt healers. Good times!

Adding to that probably anything pre NightFall, post NightFall the above at rare times, after Nightfall there was a time/meta that was semi balanced when primary water eles were being used with mind freeze+a rage+splinter fun fun.
Worst meta probably the grenth trains with searing flames, jagged bones, paragon meta just after Nightfall that were energy engines for casters, especially monks and no one died.

DF honor/dR split times were pretty fun.
All of the metas right after nightfall were really terrible (spiritual pain spike, sf eles, grenth dervs, etc)

Best Meta was when almost everyone played with Mo/A and Ranger, Mesmer, Paragon Midline. We are close to it at the moment, if there weren't more paragons or more hexers.
Worst Meta was the last one. Twice a victory of this stupid omega spike in a monthly (thank god it was a guild that deserved gold at least) and way too many overpowered builds.
Also I like most metagames after balance updates when there aren't really op builds and you can try a lot. So I really loved the metagame when nightfall came out until Mesmerspike became famous :s
